Rule No. 1 about the holiday madness: calories never count when it’s this close to Christmas. The wintertime just gives the perfect excuse to carbo-load on all of the goodies every day without any remorse for not hitting the gym afterward. Sorry, not sorry.

Kimberly Schlapman is adding to our excitement during this chilly time by making us all ‘Schlap Happy’ with her very own recipe for toffee-chocolate dessert bars. The country singer admitted to Hoda Kotb on Today that these scrumptious treats make her husband (and her whole family) joyous for her delightful cooking. While the bars aren’t difficult to make whatsoever, they require a whole lot of love thrown into the recipe mix.

Kimberly Schlapman’s ‘Schlap Happy Bars’

Prep time: 10 minutes

Cook time: 20-25 minutes

Ingredients (in baking order):

  • 2 sticks (1/2 lb.) butter, softened
  • ¼ cup granulated sugar
  • ¾ cup brown sugar, packed
  • 2 tsp. vanilla extract
  • 2 large eggs
  • 2 ¼ cups self-rising flour
  • 1 cup semi-sweet chocolate chunks
  • 1 cup butterscotch baking chips
  • 12 oz. miniature toffee bars, broken into pieces

Directions:

  1. Preheat the oven to 375˚F and grease a baking pan for the bars.
  2. Mix together the softened butter, sugar, brown sugar and vanilla in a large bowl until the mixture reaches a creamy consistency. Add each egg one at a time following each other. After the eggs are mixed, stir in the flour a little at a time until all of it is thoroughly mixed together into the dough.
  3. Throw in the chocolate chunks, butterscotch chips and toffee pieces and continue to stir.
  4. Evenly spread the chunky dough throughout the greased pans for the perfect layer of bars.
  5. Bake for about 20-25 minutes, or until the edges of the dessert bars look golden brown and crisp. Let the bars cool for around 10 minutes.
  6. Cut up into squares and dig in!
