Nothing beats the warm, flaky goodness of a homemade buttermilk biscuit fresh out of the oven. Kimberly Schlapman hung out with Hoda Kotb on Today earlier this month to share her special biscuit recipe just in time to excite your holiday guests at the dinner table.

The ‘Oh Gussie!’ chef herself weighed in on how to master the savory side dish just in time for the Christmas celebrations during a segment for the popular morning talk show. With a group of hungry audience members dancing around behind them while anxiously awaiting the buttery treats, Schlapman showed off her cooking skills by whipping up a batch of her signature biscuits.

Try out the recipe for yourself to make some delicious bites to snack on while entertaining, thanks to the Little Big Town star and her Southern cooking magic. And as Schlapman says, “These will get ya dancing!”

Kimberly Schlapman’s Cheddar Bacon Biscuits

Prep time: 15-20 minutes

Cook time: 20-22 minutes

Ingredients (in cooking order):

  • 8 slices of bacon, finely chopped
  • 1 cup onion, chopped
  • 2 cups self-rising flour
  • 1 tbsp. baking powder
  • 1 tsp. salt
  • 1 tsp. paprika
  • 1 cup buttermilk
  • 1 (8 tbsp.) stick salted butter, melted
  • 1 cup cheddar cheese, shredded

Directions:

  1. Cook the bacon strips for five to seven minutes, or until the strips look browned up and crispy in the pan. Place cooked bacon on a paper towel to rid of the access oil. Save the bacon grease in the pan in a small bowl for later, but remember to leave a bit behind for frying the onions.
  2. Fry up the chopped onions in the leftover grease for about five minutes when the onions become browned.
  3. In a large bowl, whisk together the flour, baking powder, salt and paprika and create a mixture with the dry ingredients. Leave a shallow well in the middle of the bowl to add the buttermilk and the melted butter. Continue to add the cheddar cheese, chopped bacon and onions into the dough.
  4. While the dough may get thick, Schlapman advises per her mother: “Don’t fool with your biscuits!” Allow the consistency to stay with the same doughiness and thickness until all ingredients are evenly combined.
  5. Take portions of the dough and roll pieces into balls to place on a lined cookie sheet, about one inch apart from each other. Use the reserved leftover grease to coat the biscuits before putting them into the oven.
  6. Bake for 20-22 minutes, or until a toothpick comes out clean with no dough residue. Serve to friends and family while they’re hot!
