The chilly frostbite of winter winds could make anyone want to curl up in a down blanket and stay inside to hibernate for the rest of the season. But rather than letting the cold weather get the best of you, it’s time to crank up the heat with a hearty bowl of slow cooker beef stew.

While it may take a while to cook through the pot (12 hours of patience is testing, we know), the easy-to-make dish will be worth the wait in flavor and warmth. It’s hard to beat a dish filled with meat and potatoes and this stew is no excuse.

On your marks, get set and heat up that slow cooker you’ve got stored in the cupboard because you’re about to stay full and happy all winter long with this savory stew.

Slow Cooker Beef Stew

Prep time: 20 minutes

Cook time: 12 hours

Ingredients:

  • 2 lbs. beef stew meat, cubed
  • ¼ cup all-purpose flour
  • ½ tsp. salt
  • ½ tsp. ground black pepper
  • 1 clove garlic, minced
  • 1 bay leaf
  • 1 tsp. paprika
  • 1 tsp. Worcestershire sauce
  • 1 onion, chopped
  • 1 ½ cups beef broth
  • 3 potatoes, diced
  • 4 carrots, sliced
  • 1 stalk celery, chopped

Directions:

  1. Put the meat in the slow cooker. In a separate bowl, stir the flour, salt and pepper together. Evenly coat the meat with the dry mixture by pouring it into the slow cooker on top of the beef.
  2. Stir in the rest of the remaining ingredients—garlic, bay leaf, paprika, Worcestershire sauce, onion, beef broth, potatoes, carrots and celery.
  3. Cover the entire slow cooker and set on the Low cooking level for 10 to 12 hours (or High cooking level for four to six hours).
  4. Bon appetit!
