Calling all chocoholics… Mark your calendars – January 27 is National Chocolate Cake Day! While we can’t seem to track down exactly who created this magnificent holiday, we can honor him/her by creating a delicious chocolate cake to share with those we love. From Black Forest Cake to German Chocolate Cake, there are plenty of options when it comes to whipping up this delicacy. This year, however, we have the perfect recipe to satisfy your sweet tooth: a mouth-watering chocolate cake that will have you begging for seconds! 

Mouth-Watering Chocolate Cake

Prep time: 15 min

Cook time: 30 min

Ingredients:
2 cups all-purpose flour
2 cups sugar
¾ cup unsweetened cocoa powder
2 teaspoons baking powder
1½ teaspoons baking soda
1 teaspoon salt
1 teaspoon espresso powder
1 cup milk
½ cup vegetable or canola oil
2 eggs
2 teaspoons vanilla extract
1 cup boiling water

Cake Directions:

1. Preheat oven to 350º F. Spray two 9-inch cake pans with baking spray.
2. Add flour, sugar, cocoa, baking powder, baking soda, salt and espresso powder to large bowl. Whisk or use stand mixer to combine until ingredients are mixed well.
3. Add milk, vegetable oil, eggs and vanilla to dry ingredients and mix on medium speed until combined.
4. Reduce speed on mixer and add boiling water to batter. Beat on high for 1 minute.
5. Separate cake batter evenly between cake pans. Bake for 30-35 minutes until a cake tester comes out clean from center of the cake.
6. Remove from oven and allow to cool for approx. 10 minutes. Remove from pan and cool completely.
7. Frost cake with Chocolate Buttercream Frosting (see recipe below).

Buttercream Frosting (Chocolate) Recipe

Prep time: 15 min

Cook time: 15 min

Ingredients:
1½ cups butter (3 sticks), softened
1 cup unsweetened cocoa
5 cups confectioner’s sugar
½ cup milk
2 teaspoons vanilla extract
½ teaspoon espresso powder

Icing Directions:

1. Add cocoa powder to large bowl. Whisk to remove lumps.
2. Add butter to cocoa powder and cream until combined.
3. Add 1 cup of sugar followed by a tablespoon of milk to mixture and mix on high speed for a minute. Repeat until all sugar and milk have been added.
4. Add vanilla extract and espresso powder to mixture and combine.
**Helpful hint: If frosting appears too wet, add more sugar. Use a tablespoon at a time until correct. If frosting is still too dry, add more milk a tablespoon at a time and mix until it’s the correct consistency.
