Martina McBride Shares Eggplant Pizza Recipe

Martina McBride sure knows her way around the kitchen! The country singer even wrote a cookbook, Around the Table, back in 2014 with loads of different healthy recipes for fans to create in the kitchen themselves. She recently shared a yummy pizza recipe, but there’s a catch: the crust has been replaced with an eggplant base. If you’re looking for a hearty meal that won’t leave you feeling guilty, then Martina’s eggplant pizza is what you need to try!

Martina McBride’s Eggplant Pizza

Prep time: 15-25 mins

Cook time: 25-30 mins

Ingredients (in cooking order):

  • Eggplant, whole (sliced in the cooking process)
  • Salt
  • Olive oil
  • 1 tbsp. dried Italian seasoning
  • Marinara sauce, homemade or bottled
  • Fresh basil, sliced
  • Mozzarella cheese, shredded
  • Parmesan cheese, grated

 Directions: 

  1. Set oven to 375 degrees Fahrenheit.
  2. After slicing the eggplant into personal-sized pieces, lightly salt and leave to drain on a paper towel for about 15-20 minutes. (This quick little trick removes any excess liquid and makes for faster baking.)
  3. Wipe all slices clean with a paper towel before adding any other ingredients. You don’t want any juices left around.
  4. Brush with olive oil (you choose how much) and sprinkle with dried Italian seasoning for a flavorful taste.
  5. Lay the eggplant slices on a greased cookie sheet and bake for approximately 20 minutes.
  6. While you’re waiting for your eggplant to get nice and crisp, mix up your favorite marinara sauce or prepare your favorite store-bought brand for spreading on the pizza bases.   7. Take the eggplant slices out of the oven and spread the marinara sauce onto each eggplant round. Everyone has their preferences about sauce, so it’s up to you how much you want to dollop on!
  8. Top it all off with a pinch or two of sliced basil and a whole lot of shredded mozzarella. Add a dash of the Parmesan cheese and place under a broiler until cheese looks melted and starts to bubble.
  9. Serve while hot and fresh.
