Few things are more classic than Christmas cookies. That smell as they come out of the oven has everyone gathering around the counter in their ugly Christmas sweaters. And there’s no doubt that Santa will down every last bite after he’s done putting all the gifts under the tree.

The only issue is once the cookies get hard, they can lose some that magic. Well, fear no more as this recipe ensures they’ll be both soft AND delicious. Just make sure you save some for yourself because once your guests get taste, they’ll be grabbing for them until there’s none left!

Soft Christmas Cookies

Prep time: 20 min

Bake time: 8 min

Ingredients:
• 1 teaspoon baking powder
• 1/2 teaspoon salt
• 1 cup margarine
• 1 1/2 cups white sugar
• 2 eggs
• 2 teaspoons vanilla extract

Instructions:
1. Sift flour, baking powder, and salt together. Set mixture to the side. Take a large bowl, add margarine and sugar, stir until mixture is light and fluffy. Beat the eggs one-by-one, then stir in the vanilla. Take dry, sifted ingredients previously combined and mix it in the bowl with wet ingredients. Cover dough and let it chill for 2 hours.
2. Preheat the oven to 400 degrees Fahrenheit (or 200 degrees Celsius) and grease cookie sheets. Roll small portions of the chilled dough on a floured surface, making sure each portion is 1/4 inch thickness. Use various cookie cutters to make fun, festive shapes.
3. Bake the dough in the oven for 6 to 8 minutes or until the edges are just browning.
4. Remove the cookies from the oven and place on wire racks to cool.
